Winter is prime time when they move to shallower water to spawn. Gags are prized for their hard-fighting ability - they'll try to muscle you back into their hole as soon as they're hooked. The meat is excellent too, firm and mild. To land a big one, use heavy tackle and drop a live bait like a pinfish or grunt right into their lair. Once you hook up, lock down that drag and crank hard to pull them away from structure. It's a battle of strength, but the grill-worthy fillets make it all worthwhile. Just watch out for sharks trying to steal your catch on the way up!

Mutton snapper are one of my favorite fish to target around Islamorada. These guys usually run 5-15 pounds but can get up to 30 pounds for the real trophies. Look for them around coral reefs, rocky bottoms, and wrecks in 30-120 feet of water. They tend to be loners, so you're not likely to catch a bunch in one spot. Spring and early summer are great times to fish for muttons, especially around the full moon when they gather to spawn. Anglers love muttons for their hard fighting ability and excellent table fare. To improve your odds, try drifting fresh cut bait in a chum slick. I like using live pilchards or pinfish on a knocker rig. Let your bait float naturally with the current. When a mutton hits, be ready for a strong initial run. They'll try to dive for cover, so keep steady pressure to work them up. Landing a big mutton is always a thrill.

Once hooked, keep steady pressure to pull them away from structure. Red snapper put up a great battle and make for some tasty fish tacos after.
